Position:Chef

Place of Performance: Somalia four (4) cities (Mogadishu, Baidoa, Kismayo, Beledweyne)

OVERVIEW OF CTG GLOBAL

CTG Global provides services to humanitarian organizations, government, non-governmental organizations, businesses, security companies and individuals that enables them to focus on their core business and the achievement of their objectives in hostile and threatening environments as we provide a safe and secure environment for them to do so and alleviate them of their risks, crisis and personnel management problems.

OVERVIEW OF THE POSITION

GENERAL FUNCTIONS

· Direct supervision of the kitchen hand

· Strict observance to the accepted international standards of food preparation, food handling/serving and food storage

· Direct supervision of the camp cleaner in relation to the cleanliness of the kitchen, dining room and the immediate surrounds of the dining facility.

· Overall responsibility for a high standard of hygiene in the kitchen, food preparation areas, dining room and the immediate surrounds of the dining facility.

· Maintain a high standard of personal hygiene

· Provide a 30-day cyclic menu to be approved by the Supervisor

HEALTH & SAFETY RESPONSIBILITIES

· All staff carry both legal and camp responsibilities for ensuring the health and safety of their employees, those under their control and those who might be affected by the work undertaken, i.e. co-workers, public, visitors and employees of other organisations. This includes briefing individuals working for them and ensuring there is the necessary understanding, competence and application of requirements to work safely and without harming the environment.

· Employees are responsible for ensuring they fully understand the health and safety risks involved in their work activities and their responsibility to apply the controls needed to manage those risks to acceptable levels. Similarly where work activities can have an adverse impact upon the environment, and particularly where there are legal requirements, employees are responsible for understanding those impacts and the controls they must ensure are applied.

ESSENTIAL EXPERIENCE

· Minimum 3 years of experience in provision of catering services to a multinational clientele in a conflict/post conflict zone for the UN, international organizations, industrial catering, or at a minimum of a 3-star hotel.

· Qualified chefs with an internationally recognized catering certification, which includes a thorough knowledge of kitchen, dining room and food handling hygiene requirements

· Must have experience in providing a range of nutritional food to multinational clients in adverse conditions.

· Ability to plan for adequate supplies required for preparation of meals and to guide cooks and other kitchen staff in food preparation and use of various kitchen equipment and appliances

· HAACP certification for all chefs and kitchen hands mandatory or any equivalent certification that is internationally recognized

Desirable

· Experience in the East Africa and Horn of Africa Regions, especially in Somalia is an added advantage

LANGUAGES

  • Fluent in spoken and written English, possess strong interpersonal skills with an ability to take and give clear instructions in a courteous manner.
